"Many people throw away the stem, but it is actually very tasty and versatile. At De Gieser Wildeman, we don't throw away food. We have a good overview of our stock. That way we know exactly what is available and what we need. What does remain is incorporated into new dishes the next day or used as part of our daily menus. That way, we make sure nothing goes to waste."
